A Must-Have Equipment for the Perfect Neapolitan Pizza

If you want to cook perfect pizzas in 60 seconds you need to have the stone/flour of your oven heated to 450°C (842°F). When you cook in an oven without a built-in thermometer, like the Ooni Koda, it is difficult to know exactly the temperature of your stone/flour. Even in ovens with built-in thermometers like the Roccbox, you can have temperature variations in the stone/flour.

In our opinion the best way to know exactly what is the temperature that we are cooking with is with the use of equipment like the Ooni Infrared Thermometer. This thermometer has become an indispensable tool whenever we decide to cook pizza. It provides an accurate temperature at any surface you point at. It couldn’t be easier with the laser guide you simply point the Ooni Thermometer at the center of your pizza stone and the temperature will be displayed almost instantly.

How to Use and How to Scan Temperature

To get the most accurate reading possible you should get closer to the surface measured. The closer you are the more accurate the reading will be. Ooni advises you to point the laser at the middle of the stone/flour for an accurate reading.

As we said, using the Ooni Infrared Thermometer is very easy. To scan temperatures you simply need to push and hold the trigger for a continuos reading. When the trigger is released, the reading will stay on the screen for 15 seconds or until the trigger is pushed again.

Although this thermometer is programmed with an emissivity of 0.95, which matches the emissivity of pizza stones and oven floors you can change it if you would like to measure different surfaces.  For that you simply need to hold the EMS button and adjusting up and down to select an emissivity between 0.1 and 1.00
