Ingredients

160 g (1½ cup) all-purpose flour
20 g spelt flour
113 g (1 stick) unsalted butter, room temperature
250 g (1 cup) peanut butter
100 g (½ cup) brown sugar, lightly packed
100 g (½ cup) sugar
5 g (1 teaspoon) vanilla extract
1 egg large, room temperature
3 g (¾ teaspoon) baking powder

Instructions

  1. Preheat oven to 180 ºC (350 ºF)
  2. Sift flours and baking powder together then whisk to combine.
  3. Cream butter and sugars in a stand mixer fitted with a paddle attachment.
  4. Add peanut butter and mix until incorporated.
  5. Mix in egg and vanilla extract then add flour mixture and beat until incorporated.
  6. Roll dough into 40 g (2 tablespoons) balls and place on baking sheet lined with parchment paper.
  7. Flatten cookies with a fork in a criss-cross pattern.
  8. Bake cookies for about 10 minutes.
  9. Allow cookies to cool completely on baking sheet, they need to set up before being transferred.
